🌿Protection
The farm has taken a few measures to protect its natural heritage:
All farm members receive training in environmental issues so that they are equipped with the knowledge to protect the ecosystem. A reforestation program is implemented to sow 5000 native species every year. Organic products or fertilizers that have been proven harmless to the soil and control plagues are used.
☕Quality
Only ripened cherries are picked and transported to the mill just hours after being harvested. Cherries are delivered to floatation tanks, to further sort out any under-ripe beans. The coffee are pulped, fermented and delivered to the mill's patio for pre-drying. Slowly dried at a constant temperature in wood-fired Guadiolas to ensure optimal humidity of 12% is reached before they are stored in wooden silos or jute sacks for 45 - 60 days.
